Dextran is an homo-exo-polymer of glucose (HoPS), naturally produced through fermentation by food-grade Lactic Acid Bacteria. Long-chain, low-branched, high-molecular-weight polymer that dissolve or disperse in water to give improved rheological (gelling, thickening) or physic-chemical (emulsion stabilization, particle suspension, etc.) properties, are important tools for food product formulation.
